To make seed crackers:
Transfer jar contents to a bowl and mix well. Stir in 2 Tbsp olive oil and 1 cup water.
Preheat the oven to 300ºF. After ten minutes, give the seed mixture a few more stirs, then transfer it to a lined baking sheet. Use a spoon or rubber spatula to spread the mixture evenly and smoothly across the sheet.
Bake on a middle rack for 45-50 minutes, until slightly browned and toasty-smelling. Turn off the oven and remove the baking sheet. Once the cracker is cool enough to handle, break it up into smaller pieces and flip them over. Put back in the still-warm oven and leave for another 15-20 minutes, until fully crisp.

To make savory crackers:
Transfer jar contents to a bowl and mix well. Stir in 1 tsp lemon juice, 1 Tbsp olive or canola oil, and 5 Tbsp water. If the mixture is still too dry to come together, add another Tbsp water.
Preheat the oven to 350ºF. Transfer the dough to a silicone baking mat or sheet of parchment paper (cut to the size of a baking sheet) and roll out into a large rectangle. Use a dough cutter or butter knife to cut the dough into the desired shape and size.
Bake for 15-20 minutes, until the crackers are crispy and browned to your satisfaction.
